She said reading possibly inaccurate, so could be 85db which is damaging after 8 hrs.

85 dB seems very loud for a fan tough.

As for me I do not sleep with fans on, unless too uncomfortably hot/humid. After exposing my ears to all the non-sense daily noise I think it's best not to bombard them with more noise for another 8 hours.
 
Woke up with the ear not held the pillow feeling full, the eustachian tube on that side inflamed and a new tone. Just my luck.

I don't think hearing damage causes eustachian tube inflammation; that doesn't make physiological sense to me. Are you sure you're not allergic to something in your environment or in nature? That could cause all these symptoms.

You should hear the Dyson fans they sound like jet engines.

Does sound strange? Anyway, I concur with you. She should see an ENT or Doctor as this is quite puzzling.
