Well, some of my favorites (Jaws "get another boat" and Apocalypse Now "napalm") already mentioned. Here are two others, although they are more monologues than quotes:

Blade Runner (1982). Replicant Roy Batty's (Rutger Hauer) dying words. One of the most beautiful soliloquies in science fiction film... or any kind of film.

It's when they took Donny's ashes (in a Folgers coffee can..:LOL:) to scatter them into the Pacific. Just a heads-up warning to forum members that although funny there is some foul language in this clip:

 
Good ones, @jimH! Thanks. I went to a memorial service on the ocean last week, where we were scattering someone's ashes at sea. There's almost always a breeze on the ocean. Before we left the dock, I said to the service planner: "Um, have you ever seen the 'Big Lebowski'? Make sure you do this downwind."

Cool, @nills. Not a huge fan of the movie but admire Hunter S., rest his soul, and loved the "Fear and Loathing" book. I have a magnet at my desk with his picture and this quote:
